The Best Cook Beef Stew in a Slow Cooker

What memory pops into your head when you hear "beef stew"? For me, it's reminiscent of being at my aunt's house as a kid, baking Christmas cookies. She would always have a pot of warm beef stew cooking in the crockpot for all of 10 of her nieces and nephews. The moment we'd walk in to her house, we knew what we were having for lunch!
The Best Beef Stew
Although this recipe is reminiscent of my aunt's traditional beef stew, I took it to another level by elevating the flavor profile. I love traditional beef stew, but wanted to create something that has an intense, bold, unforgettable flavor. Something that says "wow, I can't put my finger on it, but something about this beef stew is delicious." THAT'S what I'm going for!
So what's in this beef stew that makes it different?
Just a little extra flavor – by adding in trace amounts of Worcestershire sauce, Dijon mustard, oregano, thyme, and paprika.
Grocery List:
Here's what to pick up at the grocery store:
- Olive Oil, salt, & pepper
- TWO pounds beef chuck roast, cut into 1.5 inch pieces (you can probably find stew meat already cut up, which works as well)
- ONE pound baby red potatoes, quartered
- FOUR garlic cloves
- ONE large sweet onion
- ONE 6oz. can of tomato paste
- SIX medium sized carrots
- Low sodium beef broth (2 cups)
- Worcestershire sauce
- Dijon mustard
- Spices: Oregano, Thyme, Paprika
- Flour – to use as a thickener (only 3 tbsp – gluten free works too)
How to make Beef Stew
This is the easy part because the slow cooker does the work for you!
- Brown the beef on a skillet first – just season generously with salt and pepper, then brown all over
- Dice the onion, peel and chop the carrots, quarter the potatoes and add all to the crock pot. Place the browned beef on top
- In a medium bowl, whisk together the broth, tomato paste, worchestshire, dijon mustard, and spices
- Pour the broth sauce into the crockpot and cook on low for 7-8 hours or high for 3-4 hours
- Once the carrots and potatoes are fork tender, your beef stew is done!
- Sprinkle in 3 tbsp of flour and whisk it into the stew to thicken slightly. Let sit for 5 minutes and then ENJOY!

The beauty of beef stew is that it is a complete meal! Protein, vegetables, and carbs in every bite. Ah, if life could only be this easy all the time.

6-quart Crock Pot (slow cooker)
- 2 tbsp olive oil
- 2 lbs beef chuck roast, cut in to 1.5" pieces (or pre-cut stew meat)
- salt and pepper to taste
- 1 lb baby red potatoes, quartered
- 6 medium carrots, peeled and coined
- 1 large sweet onion, diced
- 4 garlic cloves, minced
- 2 cups low sodium beef broth
- 1 6oz. can tomato paste
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp paprika
- 3 tbsp flour (regular or gluten free)

Heat olive oil in a skillet over medium heat

Season the beef generously with salt and pepper. Add beef to the skillet and brown all over (about 5 minutes)

Place beef, potatoes, carrot, onion, and garlic in in 6-quart crock pot

In a medium bowl, whisk together the broth, tomato paste, worcestershire, dijon mustard, thyme, oregano, and paprika. Pour into the crockpot

Cover and cook on low for 7-8 hour to high for 3-4 hours

When the carrots and potatoes are fork tender, turn off crockpot and whisk in 3 tbsp of flour to slightly thicken the stew. Let rest for 5 minutes
